Take your favorite comfort food and give it a twist! A little garlic goes a long way in making this Mac and Jack Cheese dish go from from wow to WOW!
Bring pot of water to a boil, add Macaroni noodles and cook until done; drain and keep hot.
Slice several pieces of cheese from a larger block of Monterey Jack cheese, then dice into small cubes for easy melting; set aside.
In a separate smaller sauce pan, add the heavy whipping cream and cook on low-med heat. Stir frequently to avoid burning on the bottom of the pan, bring to a slight boil. Slowly add in the cubed cheese pieces and let melt. It will still be a very liquid consistency, don’t worry the noodles will absorb it all up nicely! Continue adding the cubed cheese until it is all melted.
Quickly add to the macaroni noodles and mix it all together well. I will sometimes add some thinly sliced pieces of un-melted cheese while mixing it up to give it that gooey texture that most kids love! Sprinkle the Garlic and Parsley (they sell this already blended together spice in the dried spices isle at most stores) spice on top, give it a good stir and you’re all done!

I love Monterey Jack cheese and thought we might like this. I didn’t find it to be very flavorful. This is the first mac n cheese that my children wouldn’t eat. Easy though.

My girls and I tried this tonight since my husband was out golfing. (Can you believe the man doesn’t like homemade mac & cheese?!) Anyway, I only added 1 tsp. of the garlic/parsley because I thought that my youngest, who is the pickiest, would be put off by the full amount. Surprisingly the 1 tsp seemed just right to me, and my youngest asked for MORE. lol
It was really good. Nice break from regular cheddar mac & cheese. I thought it tasted a lot like alfredo sauce, which I love, but haven’t had in years. I’ll definitely be making this again!
