Description

This is a pizza I made with the leftover pizza dough from PW’s Carmelized Onion Prosciutto Pizza. Same technique, different toppings. Still YUMMY!

Ingredients

  • 1 whole Pizza Crust (store-bought Or Ree's Homemade)
  • 1 Tablespoon Olive Oil (or More)
  • ⅛ teaspoons Kosher Salt To Taste
  • ¼ cups Parmesan Cheese, Grated
  • ½ whole Roaster Chicken Shredded (Light & Dark Meat)
  • 10 ounces, weight Fresh Mozzarella Cheese, Thinly Sliced
  • ¼ cups Fresh Basil, Chiffonade
  • 4 cloves Garlic, Chopped Finely, Or Less To Taste

Preparation

Preheat oven to 500 degrees.

Roll out pizza dough into a rectangular shape.

Drizzle on olive oil, sprinkle on a little salt, followed by a little Parmesan.

Randomly lay pieces of chicken over parmesan.

Lay slices of mozzarella evenly over the top of the crust.

On top of mozzarella, sprinkle garlic & basil, followed by one more dusting of parmesan.

Bake for 15 to 17 minutes in the lower half of the oven, or until crust is golden brown. Remove from oven and cut into squares. Serve immediately.

You can also make a Greek Version: With Arugula leaves, Garlic, Olive Oil, Kalamata Olives and topped with Feta!

I made this again tonight but did not have Basil so I added Rosemary. It was so fragrant and yummy!
