I don’t remember where I got this from, but it’s so simple and I always have the ingredients on hand. We eat it all the time.
1. Heat skillet over medium heat with 1 tablespoon olive oil.
2. Combine all ingredients except chicken in a small bowl and mix.
3. Coat both sides of chicken with the garlic and basil mix and place in the skillet.
4. Cook for 5 minutes on each side (just until browned). Reduce heat, cover and cook for an additional 10-15 minutes or till juices run clear.
This works for 2-3 breasts. The recipe can be doubled as needed for more people.
