Description

This is like Southern eggplant parmesan, but with fried green tomatoes. This recipe could be adapted and made just like eggplant parmesan. Just use a great fried green tomato recipe.

Feel free to skip making the homemade sauce and just go or something out of a jar. This will save you a ton of time.

This is a must try.

Ingredients

  • 4 whole Ripe Tomatoes, Peeled, And Chopped
  • 6 ounces, fluid Tomato Paste
  • 2 Tablespoons Sugar
  • 2 Tablespoons Italian Seasonings
  • ½ teaspoons Garlic Salt
  • ⅛ teaspoons Ground Pepper
  • 5 Tablespoons More Or Less Butter
  • 4 whole Large Green Tomatoes Cut Into 1/4 Inch Slices
  • ½ cups Flour
  • 6 Tablespoons Grated Parmesan Cheese
  • 2 cups Grated Mozzarella (You Can Add A Little More)

Preparation

In a sauce pan, combine the first 7 ingredients and bring to a boil over medium heat. Reduce heat and cover for an hour. Remove from heat.

Preheat oven to 350F.

In a large skillet, melt butter. Dip the green tomato slices in the flour, then brown in the skillet on both sides. Drain on paper towels.

In a greased 13 x 9 pan, put some of the tomato sauce down, then the fried green tomatoes, and then sprinkle with some parmesan. Repeat. Top with the remaining sauce, parmesan, and mozzarella.

Bake at 350F, uncovered, for 15 to 20 minutes. Let stand for 5 minutes before serving.
