Description

My hubby introduced me to these. He ate them frequently growing up because they were easy, inexpensive, and a good source of protein. I’ve put my own little twist on them.

They are perfect for those days when I’m feeling lazy & a PB&J just won’t do.

Ingredients

  • Oil Or Cooking Spray
  • 1 whole Egg (2 If Your Using Large Slices Of Bread)
  • 2 slices Bread
  • Mayonnaise
  • Mustard
  • Zucchini Relish (optional Or Substitute With Your Prefered Condiment)

Preparation

Heat the oil in a large pan (or spray with cooking spray). While the pan is heating, lightly toast the bread until it is just barely crisp but still mostly soft. When the oil is hot (it should snap if a drop of water falls in it) crack the eggs in to the pan. Depending on how runny (or not)* you like your eggs, cook until done. Spread mayonnaise & mustard on both pieces of toasted bread so that it is lightly and evenly distributed. Put a teaspoon or so of zucchini relish on one piece of bread and spread evenly. Next lay the fried egg on top and cover with the other piece of bread.

*Note: A slightly runny yolk is ideal because as the sandwich is pressed together, the yolk will break and soak into the bread.

These sound good. My mom always put ketchup on our egg sandwiches, now my kids like it too.
