A light vegetarian pasta dish made with roasted tomatoes and garlic, tossed with Parmesan cheese and fresh basil.
Preheat oven to 450ºF. Line a baking sheet with parchment paper.
Cut cherry tomatoes in half and place in a bowl with garlic and olive oil. Add salt and pepper; toss until tomatoes are coated with olive oil.
Place tomatoes on prepared baking sheet and bake for 10 minutes.
Meanwhile cook your pasta according to package directions. Once pasta is cooked, drain and place in a bowl. Add tomato mixture, fresh basil and Parmesan cheese.
