Description

Thick slices of Fontina cheese melted with Asiago, Parmesan and Pecorino cheeses just OOZING out of crusty Italian bread. Perfect for these cold winter days. I pair it with a great Creamy Tomato Basil Soup. Ooey, gooey, and very cheesy! Enjoy!

Ingredients

  • 6 slices Fontina Cheese
  • ½ cups Slivered Asiago Cheese (or Sliced Very Thin)
  • ⅛ cups Freshly Grated Parmesan Cheese
  • ⅛ cups Freshly Grated Pecorino Cheese (optional)
  • 4 slices Italian Bread, Thickly Cut
  • 1 Tablespoon Olive Oil

Preparation

Brush the olive oil generously on each side of four thick slices of Italian bread.
Layer the Fontina cheese slices on top of one slice of bread per sandwich (not the olive oil side).
Sprinkle a lot of Asiago cheese slivers on top of the Fontina cheese slices.
Sprinkle Parmesan cheese on top of the Asiago cheese.
Sprinkle Pecornino cheese on top of tthe Parmesan cheese.
Place on your hot panini grill.
Grill for about 2 1/2 minutes and then flip over on the other side, so you can check and see how golden it is, and grill until golden brown and the cheese begins to ooze onto the grill.

Very cheesey and ooey, gooey! YUM!
