This simple chicken packet recipe is so juicy and moist you’ll think it can’t possibly be good for you, but your waistline will love you for this one!
Preheat oven to 350°.
Tear off 4 good-sized pieces of foil and lay on top of each other.
Place 1/4 of the diced potatoes on the first piece of foil. Layer one chicken breast on top of the potatoes. Sprinkle liberally with taco seasoning. Coat the chicken breast evenly with approximately 1/3 cup salsa. Sprinkle with cheese, as much or as little as you like.
Seal the top and sides to make a packet. Repeat the process for the remaining chicken breasts.
Place on a baking sheet and bake for 45 minutes to an hour depending on how large the breasts are.
Remove, open and eat!

Soooo delicious! I made it with Santa Fe style salsa and shredded sharp cheddar. The only thing I’d change next time is to buy half as many potatoes. An entire potato each on top of a chicken breast was just way too much for us. Thanks for this recipe, it’s a keeper!
