Description

This was one of our Berkeley student poor-man meals during graduate school. Meal in a foil package…exciting enough even for company. The good news was that I could prepare it, pop it in the oven – go shopping, exercise, etc. And voila! Dinner.

Ingredients

  • 1 piece Lamb Hip Steak
  • 4 slices Potato
  • 1 slice 3/4" Thick Slice Tomato
  • 1 slice Thinly Sliced Onion
  • 1 teaspoon Fresh Basil
  • 1 teaspoon Fresh Parsley
  • 1 Tablespoon French Dressing
  • 1 Tablespoon Sherry

Preparation

On a large sheet of foil, arrange lamb and vegetable slices. Sprinkle basil and parsley over top. Begin to fold the foil around the meat and veggies so that you have an enclosed bottom. Then spoon on the dressing and sheery. Using a drug store fold or the crimp and fold method, close up the packet. Place on a baking sheet.

Bake for three hours at 300 degrees F. I’m sure this could be cooked faster at higher temperature, but this was the way I did it because I had places to go, people to see…and three hours gave me plenty of time to do that. I could make this for one or for twenty! Perfect with a tossed salad and some crusty bread.

P. S. I used the lamb hip steaks because, frankly, they were cheap. Other meat could be substituted.
