Description

A favorite at parties. This Filipino dish is traditionally made with oxtail and tripe. However, to make this more friendly for those who cringe at the thought of tripe, this version is made with beef stew meat.

Ingredients

  • 2 Tablespoons Vegetable Oil
  • 1 whole Onion, Diced
  • 2 cloves Garlic, Peeled And Minced
  • 2 pounds Beef Stew Meat (chunked)
  • 2 cups Low Sodium Beef Broth
  • 3 cups Water
  • 1 jar Creamy Peanut Butter (16 Ounce Jar)
  • 2 cups Cut Green Or Long Beans (more If You Want)
  • 2 cups Bok Choy (more If You Want)
  • 1 pinch OPTIONAL Salt
  • 1 Tablespoon Optional Shrimp Paste

Preparation

Heat oil over medium high heat. Add onion and saute until translucent then add garlic and saute for 1 minute. Add beef and stir until all sides are brown. Gently scrape bottom of the pot to release any beef crispies that stuck to the bottom of the pot. Slowly add broth and water and bring to a boil, uncovered. Lower heat to medium low, cover and simmer for 30 minutes. Then add peanut butter and stir until there are no more lumps. Add beans, cover and continue to simmer for 10 minutes. Stir occasionally to prevent peanut butter from sticking and burning on the bottom of pan. After 10 minutes, add bok choy, return the cover and let it simmer for 5 minutes. Taste and add salt if necessary. Serve with rice and optional shrimp paste.

Ooh this looks good. I’ve only made kare kare with the packaged mix, so I’ll have to give this a try! I can’t pass up on the oxtail though… yum :P

This is a wonderful kare kare recipe! My mother LOVED it! Just made one adjustment after adding the peanut butter and checking for flavor — added an additional packet of beef broth concentrate (makes 1 cup) to balance the flavors a little bit. We used JIF peanut butter, but I would probably try it again with fresh-ground organic peanut butter to control the sweetness. Thank you for sharing!
