Grilled chicken breast in a sauce to serve over rice.
Cut the chicken breasts in half if they are very large. Combine marinade ingredients together and marinate chicken for 6 hours or overnight. Grill over medium heat 20 minutes or until done. Cool and slice.
This grilling step could be done 1 to 2 days ahead of time. Or you could use any style of leftover grilled chicken and proceed with just the sauce recipe.
In a blender, puree the sauce ingredients. Pour over sliced chicken. Bake in the oven on low heat for 1 hour, or heat in a slow cooker using the low setting for 2–3 hours.
Serve over hot cooked rice or pasta.
