1. Preheat oven to 450ºF. Thaw green beans if frozen, pat dry, and toss with olive oil. Spread on a baking sheet and sprinkle with salt and pepper. Roast for 15-20 minutes, or until toasty and blistered looking.
2. Meanwhile, heat the butter in a small pot over medium heat. Add flour and let cook for 1 minute. Reduce heat to medium-low and gradually stir in the milk, whisking constantly to prevent lumps. Let cook for about 5 minutes, or until thickened.
3. Add both cheeses to the sauce and a sprinkle of salt and pepper. Allow cheese to melt, then toss in the cooked pasta and roasted green beans. Pour into a serving bowl and top with more cheese, if desired.
