Turkey burgers filled with sauteed spinach, onions, and feta cheese are served on toasted whole wheat rolls with a tangy cucumber yogurt sauce. This is one of the Hubs and my favorite meals, especially when served with Spicy Oven Sweet Potato Fries. Try this lighter and flavorful alternative to traditional hamburgers this summer.
The sauce should be prepared first, because the longer it sits together, the better the flavor. Mix grated cucumber, minced garlic, and lemon juice into the yogurt. Stir well, cover, and refrigerate until needed. This can be done a day ahead of time.
Mix salt and pepper into turkey meat. Divide into 8 equal portions and form uniform patties.
In a medium skillet, cook onion in 1 Tablespoon of the olive oil over medium heat until translucent, about 5 minutes. Add the chopped spinach and turn off the heat. Stir to combine and add crumbled feta. Mix well. The cheese should be starting to melt, but do not let it brown.
Spoon equal parts of the spinach-feta mixture onto the center of 4 turkey patties. Cover with the remaining 4 turkey patties and press the edges to seal.
Heat the remaining tablespoon of olive oil over medium heat in a large skillet. Place the turkey burgers in the skillet and cook until brown and the centers are no longer pink, about 5 minutes per side.
Spread both sides of the hamburger rolls with a generous amount of cucumber yogurt sauce. Serve the turkey burgers on the rolls with spinach, tomato and onion slices.
