Description

This is a regular dish in my home. It is fast and easy to make so it comes in handy when you have been on the go and are short on time. Served best with pasta or rice. Yum!

Ingredients

  • 1 pound, 1-⅔ ounces, weight Chicken Breast Fillets
  • "Masterfoods" Tuscan Seasoning, To Taste
  • 1 Tablespoon Chili Paste Or Sambal (Your Choice)
  • 2 cups, 8 tablespoons, 1-⅔ teaspoons, 1 pinches Thickened Cream
  • Freshly Chopped Chilies, For Garnish

Preparation

Before you start, throw on a pot of water to boil, as this dish goes fabulously with pasta or rice.

Cut chicken into any size pieces that take your fancy. Next, season with Tuscan Seasoning so that the chicken is lightly covered. You can always add some more later according to taste if you like more flavor.

Lightly brown the chicken then add the chilli paste and give a quick stir to spread the love. Now add in the cream, give it a good stir and let the whole thing simmer so the cream reduces to a nice sauce. Give it an occasional stir and this is the time to add more seasoning if you feel the need.

Meanwhile, your pasta /rice should be bubbling along nicely. Once your cream has reduced to your desired thickness, it’s just a matter of plating up your pasta/rice and heaping a loving spoonful of this dreamy chicken on top. Garnish with freshly chopped chillies if you like it hot!

Note: This is a very adjustable dish; you can play around with all sorts of ingredients, it’s very accommodatin’.

i will need to research Tuscan herb blends, as this spice mixture isn’t available here. but right off i’d say that even without it, looks great… with a little fresh coriander/cilantro added just before serving. thanks, J!
