Description

This is a quick and easy pasta dish to make anytime. The stars? Capelli d’angelo (angel hair pasta—thinnest long shape pasta), sun-dried tomato pesto, and arugula.

Ingredients

  • ½ boxes (16 Oz. Box) Angel Hair Pasta, More Or Less As Needed
  • 1 teaspoon Extra Virgin Olive Oil
  • 6 Tablespoons (Heaping) Classico Sun-dried Tomato Pesto
  • 2 cups Pear Cherry Tomatoes, Halved
  • 1 bunch Arugula, A Handful Per Person
  • 4 ounces, weight Herbed Goat Cheese, Or More To Taste

Preparation

Boil angel hair pasta per box instructions (adding the olive oil to the cooking water before adding the pasta), about 6 minutes or so. Check for preferred softness of pasta.

Drain pasta and then quickly toss it back into the cooking pot. Add pesto, fresh tomatoes, and arugula. Toss gently with tongs to evenly coat the pasta. Transfer pasta to a serving dish or individual dishes or bowls. Sprinkle the top with herbed goat cheese and serve immediately.

Variations:
– whole wheat angel hair pasta
– fresh grated Parmigiano-Reggiano instead of goat cheese
– fresh spinach instead of the arugula
– basil pesto instead of the sun-dried tomato version
– add sauteed chicken breast strips for a meat version

Serving suggestions:
– serve with herb focaccia or ciabatta bread with extra virgin olive oil and balsamic vinegar for dipping
– serve with a caprese salad of fresh roma tomatoes, mozzarella cheese, fresh basil leaves (with drizzled extra virgin olive oil and balsamic vinegar), salt and pepper
