Description

A delicious change up from rice casserole. Hearty enough to stand alone, or perfect as a side dish.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1  Onion, Diced
  • 4 cloves Garlic, Minced
  • 2-½ cups Low Sodium Chicken Stock
  • 1 teaspoon Each: Pepper, Garlic Powder, Oregano, Thyme, And Garlic Salt
  • ¼ teaspoons Red Pepper Flakes
  • 1  Carrot, Minced
  • 1  Bell Pepper, Stem And Seeds Removed Then Diced, I Used Red
  • 1 cup Farro, I Used Trader Joe's Quick Cooking
  • 1 cup Cherry Tomatoes, Cut In Half
  • 1-½ cup Asiago Cheese, Shredded
  • ½ cups Mozzarella Cheese, Shredded
  • 1 bunch Broccolini, Cut In Half Lengthwise

Preparation

Preheat oven to 425 F. Spray an 8×8 baking dish with cooking spray. Set aside.

In a large skillet add oil, onions, and garlic and let the mixture bloom over medium high heat for 2 minutes. Add in chicken stock and bring to simmer. Once simmering, add in all spices, carrot, pepper, and farro, cover and simmer.

Let it cook according to the farro package directions, until farro is tender. Once farro is cooked, turn heat off and add in tomatoes and 3/4 cup Asiago cheese.

Pour farro mixture into the baking dish. Top with remaining 3/4 cup Asiago and mozzarella cheese. Top everything with broccolini slices.

Bake, uncovered for 25 minutes, until cheese is golden brown and bubbly. Enjoy!
