Oh, yum. This is some amazing mac and cheese. I loved it so much, I made it two nights in a row for friends! The caramelized onions really add something unexpected to the dish. Love it!

Ree, this recipe is AMAZING! This mac-n-cheese is now in my regular rotation, except I added breadcrumbs and grated Parmesan cheese on top as well. Love love love it!

I end up making this every other week because my best friend practically cries if I don’t. This is wondersul, and I usually use different cheeses than you suggest (jack, cheddar, and sour cream) because I just am the way I am. I made it with all cheddar last time and a little sour cream, and he loved it. So much that I didn’t get any… if that says how great this is I don’t know what does.
Sometimes I chop the onions too, because my picky friend thinks long thin onions are not good. What does he know though…?

This was the first recipe of Ree’s I ever made and it nearly brought me to tears with how delicious it is. Creamy, savory, and amazingly. Careful though, cus this dish is RICH. The bacon and caramelized onions make sure this won’t just be your standard ‘throw it at the kids to make them shut up’ macaroni and cheese. I added some mushrooms to the onions and didn’t regret it.

My parents and I had this for our Christmas dinner last year and it was a huge hit. We had so much fun making it and eating it. Dad kept wandering into the kitchen to sneak bites! The leftovers were fantastic and kept us full for a few days. I’m looking forward to cooler weather so I can make this again. Fantastic recipe!

If I could rate this higher than 5mitts I would! My hubby and family LOVED this mac and cheese. I think because of the close holiday the first time I made this there was no Gruyere to be found but I’ve substituted white cheddar or mozarella different times and its always wonderful!

absolutely delicious. it’s best that this is a time consuming recipe because i would make it ALL the time. cheese is always better with bacon!

It was good, but I was expecting over-the-top. I guess I should compare it to macaroni and cheese…then it is the most amazing thing on earth! It was a fair amount of work and I thought the combination of cheeses would make it “to die for.” I don’t know…I can’t say that I’m going to make it again.

This was wonderful comfort food. The best I’ve ever made. The blend of cheese with bacon & onions made it over the top. Enjoy!!!

hello! i was wondering if you’re supposed to use unsalted or salted butter for this recipe? i was thinking that maybe unsalted should be used due to the salt added from the cheeses but i just wanted to make sure since the recipe does not specify.
i’m hoping to use this recipe in a couple days for a dinner party, so i hope to hear from someone pretty soon. thanks in advance!

I have made this twice and everyone raved about it both times. The first time I fiddled with the cheeses and it was good, but the second time I followed the recipe exactly and it was to die for! I will certainly keep this on my list of special occasion dishes.

I recently had a Dr. Zhivago party during a snow storm and served this mac ‘n cheese! Twelve of the 24 people invited made it thru the snow, and said this dish made it all worth it!

I’ve made this twice now and my husband loves it. When his buddies talk about mac n’ cheese he tells they don’t have anything on me and “my” mac n’ cheese! I must say, the cook and prep times are a bit misleading. Both times I have made this, I have spent a total of 2 hours including bake time….
This second time around making it I used Mozzarella, fresh Parmigiano Reggiano, Sharp Cheddar, and Monterey Jack. A fun mix of cheeses!

I made this around new years and I loved it so much I made it again for Easter! Man, do I love my macaroni and cheese but with bacon AND caramelized onions? Excuse me while I faint.

LOVED IT!!! Absolutely fabulous!
My only change would be to use more cheese and maybe more bacon (b/c you can never get enough of either) or maybe top with a little of both.
This will definitely be something I fix regularly.

ok… my first mistake was to make this for thanksgiving! now that my parents have had a taste, i will have to make it two more times this year! hee hee. it makes me look like a master. thank you!!

Everything is prepped and ready to make tonight, I have been dreaming of this day. Finally it is hear. I was so excited that my Publix (grocery store) had all the items to make it. A plus, the Gruyere cheese is smoked… this should make it pop even more! I just hope my hubby will accept the goat cheese with a smile
