Oh, yum. This is some amazing mac and cheese. I loved it so much, I made it two nights in a row for friends! The caramelized onions really add something unexpected to the dish. Love it!

Ree, this recipe is AMAZING! This mac-n-cheese is now in my regular rotation, except I added breadcrumbs and grated Parmesan cheese on top as well. Love love love it!

I end up making this every other week because my best friend practically cries if I don’t. This is wondersul, and I usually use different cheeses than you suggest (jack, cheddar, and sour cream) because I just am the way I am. I made it with all cheddar last time and a little sour cream, and he loved it. So much that I didn’t get any… if that says how great this is I don’t know what does.
Sometimes I chop the onions too, because my picky friend thinks long thin onions are not good. What does he know though…?

This was the first recipe of Ree’s I ever made and it nearly brought me to tears with how delicious it is. Creamy, savory, and amazingly. Careful though, cus this dish is RICH. The bacon and caramelized onions make sure this won’t just be your standard ‘throw it at the kids to make them shut up’ macaroni and cheese. I added some mushrooms to the onions and didn’t regret it.

My parents and I had this for our Christmas dinner last year and it was a huge hit. We had so much fun making it and eating it. Dad kept wandering into the kitchen to sneak bites! The leftovers were fantastic and kept us full for a few days. I’m looking forward to cooler weather so I can make this again. Fantastic recipe!

If I could rate this higher than 5mitts I would! My hubby and family LOVED this mac and cheese. I think because of the close holiday the first time I made this there was no Gruyere to be found but I’ve substituted white cheddar or mozarella different times and its always wonderful!

absolutely delicious. it’s best that this is a time consuming recipe because i would make it ALL the time. cheese is always better with bacon!

It was good, but I was expecting over-the-top. I guess I should compare it to macaroni and cheese…then it is the most amazing thing on earth! It was a fair amount of work and I thought the combination of cheeses would make it “to die for.” I don’t know…I can’t say that I’m going to make it again.

This was wonderful comfort food. The best I’ve ever made. The blend of cheese with bacon & onions made it over the top. Enjoy!!!

I made this tonight for the Man, and it was a huge hit. However, I didn’t have time(or the money) to go to a good grocery store, so for cheeses I used Fresh Mozzerella, Provolone, Sharp Cheddar, Fresh Parmesan, and Fontina in amounts equal to the sum of what Ree used. I also used skim milk, and it was still SUPER thick and Delicious! I wish I had some goat cheese, it I’m sure would give it just the right flavor kick!

Made this the other night and followed the recipe with one exception; couldn’t bring myself to use any bacon fat in the roux in addition to the butter (!!!) as was done in the full recipe at Pioneer Woman.
Husband loved it, son home from college loved it and he had it for breakfast 2 days in a row, just finished it today. Will be making it again soon and lightening the milk products a bit since the other reviewer had success. The combination of cheeses is A+ and I won’t mess with that when I make it again.

I made this for a New Years potluck today, and I was one of the few people who came home with an empty dish. Everyone loved it. I used ricotta instead of goat cheese which allowed the gruyere to really stand out. It smelled a lot like fondue to me so I added in a little bit of nutmeg. It was definitely a hit with everyone. Next time I go and see my mom, I’m making this for her.

Outstanding mac and cheese. I ended up cooking for my sick son on Christmas and he loved it. We were not able to travel to our family for the holiday and so I made all of his favorites.

Well, THAT was a spiritual experience if I ever had one. Forget serving it with meat or a salad – you’ll be lucky if you don’t remove it from the oven and face-plant directly into it.
However, one thing missing from this version (as opposed to the photo-filled step-by-step) is the fate of the reserved bacon grease from step 2. In the original, she adds 1 TB of the reserved bacon grease to the butter/flour mixture in step 4. This adds yet another layer of awesome to this dish.
