Description

I’m a vegetarian and my boyfriend is not, but this is one meal we can agree on. He chooses his favorite meat and I choose my favorite veggies and we’re both happy!

Ingredients

  • 1 pound Or More Of Your Favorite Protein: Beef, Chicken, Or Pork
  • 1 whole Green Bell Pepper, Sliced
  • 1 whole Red Bell Pepper, Sliced
  • 1 whole Yellow Onion, Sliced
  • 1 whole Medium Zucchini, Sliced
  • 1 whole Summer Squash, Sliced
  • ½ cups Mushrooms
  • _____
  • FOR THE MARINADE:
  • 4 whole Limes, Juiced
  • ¼ cups Olive Oil
  • 1 teaspoon Ground Cumin
  • 3 cloves Garlic, Minced
  • ¼ cups Fresh Cilantro, Chopped
  • 1 pinch Cayenne Pepper
  • 2 dashes Tabasco Sauce, Or More To Taste
  • 1 teaspoon Salt, Or To Taste
  • ½ teaspoons Pepper Or To Taste
  • 1 package Fajita Sized Tortillas

Preparation

For these fajitas, choose a pound or two of your favorite meat – skirt steak, chicken, pork, etc. For the veggie lovers, zucchini, summer squash, mushrooms, red and green bell peppers and yellow onions are perfect.

Prepare the marinade – add the limes, olive oil, cumin, garlic, cilantro, cayenne pepper, Tabasco, salt and pepper to a medium sized bowl and whisk to combine.

Separate the meat and veggies into separate baking dishes and cover generously with the marinade. Refrigerate for 4-5 hours (or more).

You can grill, broil or saute the ingredients. It’s up to you. We like to grill the meat, zucchini and squash and saute the onions, peppers and mushrooms on the stove.

Serve with warm tortillas and lots of toppings: salsa, cheese, guacamole, sour cream, and whatever else floats your boat.

I decided to make chicken fajitas tonight in a pinch and used this marinade. It was great! Next time I will plan ahead and get all the yummy veggies to go with. Thanks for sharing.

My sister and I made these today when our sister requested chicken fajitas for her 17th birthday dinner, and they were delicious! We didn’t marinate any of the veggies – just sauteed some onions and peppers – but we marinated and grilled the chicken and it turned out great. Thank you for sharing!
