A favorite Indian vegetarian recipe enjoyed with chapati or paratha. It is popularly called Matar Paneer in India.
Cottage cheese slabs are available at supermarkets and can be cut into desired shapes. They are very tender and should not be overcooked. Follow package instructions and cut them into squares or triangles. Place a heavy bottom pan over a medium flame and heat oil. Add onion and ginger garlic paste and fry on medium flame till it turns light golden brown. Add turmeric powder and tomatoes and cook for another 2 to 3 minutes. Add in green peas, corn, salt and chili powder. After another 2 to 3 minutes, lower heat and add cottage cheese and capsicum. Let all ingredients combine for 5 minutes on slow flame. Do not overcook. Take out in the serving bowl and serve hot, along with chapati or whole wheat bread.
