Description

Baked eggplant worthy of changing peoples’ minds.

Ingredients

  • 1 whole Eggplant
  • 1 bunch Fresh Basil Leaves
  • 1 cup Ground Turkey Meat
  • 1 jar (24 Oz. Jar) Regular Pasta Tomato Sauce, Whatever Flavoring You Like
  • 3 cups Freshly Grated Mozzarella
  • 2 Tablespoons Red Pepper Flakes
  • 1 pinch Nutmeg
  • Salt To Taste

Preparation

1. Preheat your oven to 350 degrees F.
2. Slice the eggplant horizontally very thinly. Salt it well and let it sit in the salt for 45 minutes, or until it “weeps.”
3. Pat it dry with paper towels and layer it into a large baking dish until the bottom is covered. Spaces are A-OK.
4. Add torn basil, ground turkey, a thin layer of tomato sauce, lots o’ cheese, and a sprinkle of red pepper flakes.
5. Repeat and repeat until you have no eggplant left.
6. At the top, sprinkle a bit of nutmeg and place it all in the oven.
7. In 60 minutes or less, you will change someone’s mind about eggplant, one gooey bite at a time.

No, the meat was raw. It will cook in the oven!
