Description

I looked on the site for eggplant recipes but didn’t have all the ingredients for any of the recipes, so I used what I had on hand. It turned out great and very tasty! Hope you like it!

Ingredients

  • 1 whole Medium Eggplant, Peeled And Diced Into 1" Pieces
  • 2 whole Medium Zucchini, Sliced Thinly
  • 1 jar 18 Oz Marinara Sauce
  • ½ whole Cooked Small Cauliflower, Cut Into Pieces
  • ½ cups Parmesan, Grated
  • ¼ cups Bread Crumbs

Preparation

Spray cookie sheet with cooking spray and spread chopped eggplant evenly. Spray eggplant. Cook in preheated 400F oven for 20 to 25 minutes, until lightly browned and cooked through. Mix with zucchini, sauce, and cauliflower. Sprinkle with bread crumbs and then Parmesan cheese. Bake in a 400F oven, covered, for 15 to 20 minutes or till bubbly.

Serve as a side dish or over cooked spaghetti as a main dish. May be served with a salad and garlic bread.
