Description

This great to make in the morning before church- it’s ready and waiting for you when you get home!

Ingredients

  • 1 cup Orzo
  • 1 cup Water
  • 1 can Diced Tomatoes
  • 2 whole Boneless, Skinless Chicken Breasts, Cut Into Small Pieces
  • 1 can Whole Pitted Black Olives
  • 1 sprig Fresh Parsley
  • 3 Tablespoons Greek Seasoning (I Use The Pampered Chef Kind)
  • 1 dash Salt And Pepper, to taste

Preparation

In a crock pot, combine all ingredients. Make sure you drain the olives, but definitely not the tomatoes. You want all that yummy tomato juice in there with the orzo.

Stir it all together well and cook on high for about 30-45 minutes, and then put in low for the remainder of the cooking time.

Occasionally, you may have to check it to see if it needs more water (the orzo absorbs so much…) and give it a stir.

Once the chicken is cooked thoroughly and the orzo is good and tender, you’re ready to eat. The salty olives go really well with the warm tomato-y orzo and savory chicken! :) Hubby loves this one!

It is also really pretty with some feta cheese sprinkled over the top!

Yum! This was delicious! I only had lemon garlic orzo (Pappardelle’s) and fresh grown tomatoes, but, even with the substitutions it turned out great!
