Description

I like easy food. I like to be able to come home from work and whip dinner together in about 30 minutes. This is a super easy and quick meal that is also super yummy and healty!

Ingredients

  • 1 pound Lean Ground Beef
  • ½  Medium Sweet Onion, Finely Chopped
  • 5  Personal Size Flat Breads
  • 1 Tablespoon Olive Oil
  • 1 can (about 16 Oz. Size) Fat Free Refried Beans
  • 1 Tablespoon Cumin
  • ½ teaspoons Chili Powder
  • ½ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • 2 teaspoons Hot Pepper Sauce
  • ¼ cups Salsa
  • 1-¼ cup Shredded Mexican Cheese Blend
  • 1-¼ cup Shredded Pepper Jack Cheese
  • 2 cups Shredded Romaine Lettuce
  • 2  Roma Tomatoes, Diced

Preparation

Preheat oven to 400ºF. Brown meat in a large skillet over medium heat. When meat is browned, add onions and saute until onions are tender (about 3-4 minutes).

While meat is browning, brush flat breads with olive oil and place on two large baking sheets. Place flat breads in the oven 5 minutes. Remove from the oven and spread each flat bread with 2 tablespoons of refried beans.

Once the meat is browned and onions are tender, reduce heat to medium low and mix in cumin, chili powder, salt, pepper, hot pepper sauce, and salsa. Mix well. Sprinkle 1/2 cup of the meat mixture over refried beans on each flat bread. Top with 1/4 cup of Mexican cheese blend and 1/4 cup of pepper jack cheese. Return to the oven and bake for 10-12 minutes or until cheese is melted and slightly browned on top. Remove from the oven and sprinkle with romaine lettuce and diced tomatoes.
