An easy pasta dish perfect for a hot summer day. We like to eat it with a fresh loaf of bread and chilled white wine.
1. Prepare pasta according to package directions.
2. Remove the stem and seeds from the peppers. Chop up the pepper and tomatoes. Slice the green onions diagonally.
3. Meanwhile, brown the sausage in a skillet over medium heat.
4. Once the meat is browned and cooked through, add the peppers and dressing and let it simmer for a few minutes until the peppers soften.
5. Turn off the heat and add the spinach. Stir in gently until wilted.
6. Drain the pasta and place it in a large serving dish.
7. Layer the meat mixture over the pasta and then add the tomatoes, green onions, olives and feta.
8. Salt and pepper to taste. You can add extra dressing to your serving if needed.
