This tasty dish is so easy to prepare. I recently brought it to a church dinner and it was devoured in no time.
Start by cutting the boneless ribs into bite-size cubes and put them in your slow cooker or crock-pot. Next rinse and drain the sauerkraut and place it on top of the pork. Lastly, mix together the soup and brown sugar and pour over the sauerkraut. Cover and cook on low for 12 hours or on high for 6 hours. Stir together and serve.
Notes:
A single recipe fits in a 4qt slow cooker.
A double recipe fits in a 7qt slow cooker.
For a French onion soup substitute, use 10 ounces of water plus 1/4 teaspoon onion powder or minced dried onion.
Recipe can also be placed in a casserole dish, covered in foil, and baked in a 350 F oven for 4 hours. Place a sheet pan under the dish to catch any drips.

This was pure comfort food. Everyone loved it, including my 4 children, ages 10 and under.
I served it over noodles, but I’m thinking next time to use brown rice.
