Description

This Easy Pesto Pasta Salad is jam-packed with fresh arugula, grape tomatoes and bites of sun dried tomato, covered in a delicious pesto sauce!

Ingredients

  • 1 box (16 Oz. Size) Pasta (Wheat, Whole Grain, Veggie)
  • 2 cups Arugula
  • ⅓ cups Sun Dried Tomato, Chopped
  • 1 cup Grape Tomatoes, Whole
  • FOR THE PESTO:
  • 1 cup Basil
  • ¼ cups Olive Oil
  • ¼ cups Water
  • 2 cloves Garlic
  • 1 pinch Salt
  • ½ cups Almonds (or Nut Of Choice)

Preparation

Cook pasta according to package instructions. For cold pasta, I always cook just a minute under recommended time. Drain and set aside.

Add pesto ingredients to a blender cup and work it for about 2 minutes. Add pasta, arugula, sun dried tomato, grape tomatoes and pesto to a large glass bowl and mix to combine. Serve cold or at room temperature.
