Description

A yummy pasta dish similar to Noodles and Company. You can add as much spice as you like.

Ingredients

  • 1 pound Grilled Chicken
  • 2 jars 16 Oz Alfredo Sauce
  • 1 can 8 Oz. Tomato Sauce
  • 2 dashes Red Pepper Flakes (or As Many As You Want)
  • 1 pound Penne Pasta
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 package Sliced Mushrooms, 6 Ounce Package
  • 1 bunch Fresh Spinach

Preparation

Sprinkle your chicken with a bit of salt and pepper then grill over medium-high heat until done (4-8 minutes each side). Let rest off to the side.

In a large saucepan mix alfredo sauces, tomato sauce, diced tomatoes, and a dash of red pepper flakes (to taste). Let simmer for at least 15 minutes.

Cook penne noodles according to package, adding another dash of the red papper flakes to the boiling water. Drain when it’s done and set aside.

Set a large skillet on medium heat and coat the bottom with olive oil. Add mushrooms and saute them until they are soft. After mushrooms are done, add pasta and cook for 4-5 minutes. Slice chicken into strips and add to skillet. Next, add enough sauce for your liking. (For the Noodle Company taste, add just enough sauce to lightly cover the noodles). Once everything has mingled for a minute or two, add spinach right before serving, to soften.

I make mine in 4 seperate servings since we all like different combinatons of the ingredients.

For a really easy meal, use the precooked grilled Tyson Chicken.

Oh my gosh! I miss Noodles and Company so much. I used to live in Colorado and I go to Noodles whenever I visit there. I will definitely give this a try. Thanks for sharing.
