At the bottom of the slow cooker, add the carrot pieces, onion, white wine and stock. (If you would rather not use white wine, use a whole cup of water or chicken stock. I just love the taste of chicken and wine.)
Remove the gizzards from the chicken, then place in the cooker. Rub the body with the spices, adding more or less according to the size of the chicken and your preference.
Squeeze lemon juice over top of chicken. Rub into skin.
Turn the crock pot on high and cook for 6 hours. Serve and receive the love.
Note: you could definitely add different things to this recipe, making the flavors more complicated or simplifying it to your liking. Adding sage, garlic or thyme would be magnificent! Play around with the ingredients.
