Description

My mom has been making us chicken pot pie this way for my entire life! It’s really easy and doesn’t have any “soup” ingredients. YUM!

Ingredients

  • 1 Tablespoon Olive Oil
  • ¾ cups Chopped Celery
  • ¾ cups Chopped Carrots
  • 1 cup Leftover Cooked Chicken Pieces
  • ½ cups Frozen Peas
  • 1 dash Salt
  • 1 dash Pepper
  • ¾ cups Milk
  • 3 Tablespoons Flour
  • 2 whole Refrigerated Pie Crusts

Preparation

Preheat the oven to 350F.

Start by heating up a pot with olive oil and cook celery and carrots for 5 minutes. Next add the cooked chicken, peas and salt/pepper to taste.

In a separate saucepan on medium, pour in milk. Add flour and whisk until a “rue” forms… it’s a thicker paste like consistency but should not have any lumps or be so thick that you can’t stir it. Add more milk and flour if needed. If you mess it up, it’s ok! Just start over.

Now, add the rue to the pot pie ingredients and stir to combine until thickened. Put one of your pie crusts on the bottom of your pie dish. Add the pie ingredients. Place the other pie crust on top and mold the crust together to form whatever pretty design you like. Cut 4-5 slits in the top of the crust so the pie can breathe.

Bake at 350F for about 30-35 minutes depending on your oven. Enjoy!!

This sounds like the perfect pot pie. I really like the fact that there is no condensed soup for the gravy. I am going to make this very soon!
