Description

An quick and easy dinner that the kids will love and you can adjust to your liking. Add a bit more stock to make it more like a pho or less stock to make it like a stir fry.

Ingredients

  • 8 ounces, weight Thin Rice Noodles
  • 2 teaspoons Grape Seed Or Vegetable Oil
  • 1 pound Flank Steak, Sliced Thin
  • 1 whole Red Bell Pepper, Seeded, Cored And Sliced Thin
  • 1 whole Yellow Bell Pepper, Seeded, Cored And Sliced Thin
  • 2 teaspoons Grated Ginger
  • 4 cloves Garlic, Minced
  • 1 cup Beef Stock
  • 2 Tablespoons Soy Sauce
  • 2 cups Baby Spinach
  • ¼ cups Cilantro, Chopped

Preparation

Cook rice noodles according to package directions until just soft. Drain, rinse with cold water, then set aside.

In a large wok, heat oil over high heat. Add beef, peppers, ginger and garlic and cook until beef is just cooked, about 3 – 5 minutes. Add in beef broth and soy sauce. Bring to a boil, then reduce the heat.

Add in spinach and cooked noodles. Heat through until spinach wilts, then stir in cilantro before serving in deep bowls.

This is a fantastic dish! I love that the only ‘seasoning’ is soy sauce — yet it is FULL of flavour! And super easy, and came together very quickly, which is a must when you’ve got toddlers! Thanks for sharing what is sure to become a new family favourite!
