Description

These sandwiches are not only healthy but oh so tasty! They are super easy to make and they taste even better the second day. When I worked, I would make these sandwiches the night before and they were the perfect lunch for work the next day.

Ingredients

  • 2 whole Chicken Breasts
  • 1 whole Bell Pepper, Sliced Into Thin Strips
  • ½ cups Onion, Sliced Into Thin Strips
  • 2 Tablespoons Vinegar Plus 1/2 Cup, Divided
  • Black Pepper
  • 6 slices Provolone Cheese
  • 6 pieces Kaiser Rolls
  • 6 teaspoons Yellow Mustard

Preparation

Boil the chicken breasts till fully cooked (about 25 minutes). In the meantime, slice the bell pepper and onion into thin slices. Heat a skillet on medium heat. Add the vegetables and 2 tablespoons vinegar. (I prefer to saute the veggies in vinegar instead of olive oil because it’s a little healthier that way.) Saute for 2-3 minutes until veggies become soft. Add the shredded chicken and pour the remaining 1/2 cup vinegar into the skillet. Stir till well combined, then turn the heat to low and let simmer (covered) for 5 minutes. This allows the chicken to absorb the vinegar. Season with a little pepper.

Place a slice of cheese on one side of each kaiser roll and place under the broiler till cheese melts and the roll becomes slightly crisp. Squeeze a little mustard onto the roll, then fill with the chicken mixture. Serve with fresh fruit, veggies, or your favorite potato chips. Enjoy!
