Easiest and Tastiest Chicken Enchiladas

Description

I’ve been making this recipe for more than fifteen years and my husband still says it’s better every time.

Ingredients

  • ½ cups Sour Cream
  • ½ cups Half-and-half
  • 1 jar Green Sauce/Salsa (we Prefer Pace Salsa Verde)
  • 1 whole Rotisserie From The Grocery Store, Meat Only (or 3 Chicken Breasts Cooked, Meat Only)
  • 1 cup Chopped Onion
  • 4 cups Shredded Cheddar/Monterey Jack Cheese, Divided
  • 1 package Flour Tortilla Shells (we Use Aztec)
  • 1 can Black Olives, Sliced (optional)

Preparation

Preheat oven to 375 degrees. Prepare 9 x 13 pan by spraying with nonstick spray.

Sauce: Combine sour cream, half and half and green sauce in a bowl. The sauce should be a little thicker than Half and Half when done. Since green sauces vary, if the sauce seems to0 thick, add more half and half; too thin, add more sour cream.

Filling: Blend together chicken, onion and 2 c. of the cheese. Salt and pepper to taste.

Assembly: First, pour enough sauce to cover the bottom of the pan.

Fill each tortilla with filling mixture, roll, and place seam side down in the pan.

Once all 8 are in the pan, pour remaining sauce over the tortillas and spread, making sure all the tortillas have sauce on them.

Top with additional cheese. Garnish with sliced black olives, if desired.

Bake uncovered for 30 minutes.

I made these tonight and we loved them. The sour cream I had was bad so I used greek yogurt and cream cheese and still came out rockin!

made this tonight and it was a big hit! i cooked the chicken myself and i think that definitely added something to it. next time i’ll try more veggies-maybe peppers or something. this is definitely a keeper.

I made this tonight and it was a hit! It will definitely be part of my dinner rotation. It was easy and tasty! My SO really enjoyed it and doesn’t usually like enchiladas. I made a smaller portion of this and it was still a lot of food. I also added some shredded zucchini to the filling and will likely add more veggies the next time I make this.

It was good, easy and a nice change, but overall I don’t think me or my family were a huge fan of the green sauce. I think we’ll stick with red salsa or enchilada sauce next time. Thank you for a great dinner though, we enjoyed trying it out! :)

Not too great. The salsa I had was spicy but other than that, boring. The ingredient amounts are a little vague. 1 jar of salsa or green sauce- 8 oz? 12 oz? 20 oz?, what size tortillas and how many in a package? 1 can black olives – how big a can?
I didn’t use a whole chicken and it made 9 enchiladas and I had to use an additional 9×9″ pan.

Awesome..super easy to prepare. Everyone loved them. I used Herdeez brand green salsa a little more on the spicy side and added some chopped jalepenos. It was great!

Yumo hubby loved them. This will be a keeper. I made with greek yogurt and cream cheese and it still tasted awesome.
