Description

A great sandwich to serve at a luncheon or for your family to make them feel special. This is also a great appetizer if you cut them into quarters.

Ingredients

  • 7 ounces, weight Dungeness Crab Or Any Lump Crab Meat
  • 1 cup Shredded Cheddar Cheese
  • ½ cups Choppped Celery
  • ¼ cups Fresh Chopped Parsley
  • ½ cups Mayonnaise
  • 1 Tablespoon Lemon Juice
  • 1 teaspoon Dijon Mustard
  • ⅛ teaspoons Tabasco Or Hot Sauce Of Your Choice
  • 4 whole English Muffins
  • ¼ cups Butter, Softened
  • 8 slices Thin Sandwich Size Cheddar Cheese Slices

Preparation

Combine crab meat, cheese, celery and parsley. Combine mayonnaise, lemon juice, mustard and Tabasco. Toss crab meat mixture with the dressing.

Split and toast english muffins then spread with butter. Spread crab mixture and 1 slice of cheese on top of each muffin.

Broil about 4″ from heat for about 4 to 5 minutes until cheese is melted and crab mixture is heated.

To serve as an appetizer, cut each muffin half into quarters. Plate with parsley and lemon slices or quarters for a pretty presentation.
