Description

I learned this from a mother of my first roommate. All you need is a few ingredients and a microwave. I never thought this could rival my mother’s fettuccine till I tried it.

Ingredients

  • 1 package Cream Cheese (8 Oz.)
  • 1 stick Butter
  • 1 cup Milk
  • 8 ounces, weight Grated Parmesan Cheese
  • 1 pound Fettuccine Noodles, Cooked

Preparation

In at least a qt size bowl add cream cheese and butter. Microwave on medium setting, stirring every couple of minutes till there is no longer any separation between the butter and cream cheese and it is nice and smooth ( I like to use a whisk if I have one).

Add the milk and return to the microwave repeating the stirring every couple minutes. When it gets bubbly and begins to thicken remove from microwave and add Parmesan, stir.

If you use the shelf stable grated Parmesan the texture will be a bit off and it also will be somewhat more salty. I like to use Neufchatel, the cream cheese with less fat and I like to use the shredded Parmesan in the dairy case.

I lived off this stuff and college and still make for a sauce to use when I want to add quick cheese sauce something. Grab a rotisserie chicken at the store and you can have chicken alfredo.

I imagine some people have microwaved noodles before. This whole meal could be made with only a microwave.
