Description

I make this every year on Halloween. I originally got the recipe from my Tupperware Lady and modified it to suit my family’s tastes. Now since they are older they actually eat most of the original ingredients AND the cooked pumpkin.

Ingredients

  • 2 pounds Ground Beef
  • ¾ cups Diced Celery
  • ¾ cups Diced Onion
  • ½ cups Diced Green Pepper
  • ¼ cups Soy Sauce
  • 2 Tablespoons Packed Brown Sugar
  • 1 can Sliced Mushrooms (4 Ounce Can)
  • 1 can (10 Oz. Size) Cream Of Mushroom Or Cream Of Chicken Soup ("Healthy" Version Is Fine)
  • 2 cups Cooked Rice
  • 1 whole Medium - Large Pie Pumpkin
  • Optional Substitutions For Onion And Green Pepper: 3/4 Cups Diced Carrot And 1/2 Cup Corn

Preparation

Preheat oven to 375 degrees (F).

Prepare ground beef mix in a frying pan by sauteing ground beef, celery, onion and green pepper until beef is browned and vegetables are soft. You can substitute other vegetables such as chopped carrots or corn, depending on your family’s tastes…or add them all for a total of about 2 cups diced vegetables.

In a large bowl combine 4 cups of the ground beef mix with the remaining ingredients (except the pumpkin).

Cut open the pumpkin and remove the seeds. Stuff pumpkin with meat mixture*. Place on foil-lined cookie sheet and and bake for one hour.

To serve scoop out meat mixture along with the cooked pumpkin.

* If I have leftover meat mixture I bake it in a small casserole dish along with the pumpkin.

Oops – that should be 2 cups cooked rice, not 2 cans.

Great recipe! Instead of 2 lbs hamburger, I used 1 lb hamburger and 1 lb sausage – gives it a little extra kick. I also baked it in 4 small pumpkin pie pumpkins so we all had our own dinner in a pumpkin. You can also draw a jack-o-lantern face with a sharpie before baking. Very fun and very festive.
