Description

Dean Martin is my hero, and he said it best when he sang, “Ain’t that a kick in the head.” If you love pasta, cheese and things with a KICK, you’ll love this spicy cheesy pasta! That’s amore!

Ingredients

  • 1 box (16 Oz. Box) Penne Pasta
  • 16 ounces, weight MEXICAN Velveeta Cheese (Please Use Mexican Style Only)
  • 16 ounces, weight Sour Cream
  • 2 cans (10 Oz. Can) Rotel Tomatoes With Diced Chiles
  • 4 ounces, weight Can Diced Jalapenos (you Will Only Use 1/4 Of This Can)

Preparation

In one large pot, get your water starting to boil for your pasta. Cook as the pasta package directs you to.

Start dicing up your Velveeta in cubes. It’s easier to melt this way. See all the little specks in there? That’s the Mexican Velveeta. Be sure to get that and not the regular Velveeta. It’s a little hard to find, but ya gotta have it!

Add the sour cream and the Rotel to the Velveeta.

Now comes the best part. Open up that can of diced jalapenos. Scoop in a fourth of the can into the Velveeta mixture.

This is a good kick in the head. Not so hot that you can’t eat it. But not for the faint of heart either.

(Now after the dish is all combined, and if you want even more of a kick, by all means, add more! Personally, I would add more, but I don’t want my family members yelling and screaming and tearing up on me.)

Once the pasta has finished, strain and put back into the large pot.

Your Velveeta goodness should all be mixed together and melted by now.

Pour sweetly over the waiting penne.

Start combining the two.

Warning: at this point your mouth starts watering and you might break out into a Dean Martin song.

At first it might appear a bit runny, but after it sets about 5 minutes, it will thicken up just perfectly.

This was SOOOO good!! I made it Thursday night and then again last night for a youth progressive dinner. They loved it, too. Thanks so much. I was in need of a new pasta dish to add to our rotation. We have 6 kids so I am always in need of fresh ideas:)

All of your recipes look so yummy….I’ve added so many to my recipe box. I have to tell you, my Dad’s favorite singer is Dean Martin. I spent all week making a video of my dad for our family. The first song that played with my dads pictures was, “I will”.

Just wanted you to know :)

ps…..if my pants don’t fit in a few weeks you’re to blame :)

A definite keeper and a winner with our 6 kids. I added some smoked sausage the first time I made this.

Made this for dinner tonight. It was pretty good! Definitely easy and it even got props from my grams, which are really hard to get! Thanks for sharing!!

This dish was super easy to make, which was exactly what I was looking for last night! It was interesting to combine Mexican flavors with pasta – a Mexican mac ‘n cheese, if you will. I added some pre-cooked, diced chicken to make it more of a one-dish meal. Definitely heed the author’s advice and let the pasta and sauce sit for 5 minutes after combining – the consistency thickens up perfectly.

I’m rating this 4 mitts because I asked my significant other how he liked the dish, and he replied, “It’s good.” A 5 mitt response is more like, “Mmmmm. So good…. You have to make this again.” And I just didn’t get that reaction. Still a tasty meal, and I can imagine many others rating this 5 mitts, given individual tastes! Thanks for sharing!
