I call this dish “Dancing Chicken” because one of the ingredients is salsa. Silly? Maybe, but the dish is still super easy and delicious!
Note: The ingredient amounts are approximate. I typically just use whatever looks good. Try it once and you’ll figure out what amounts work best for you.
1. Place chicken in a baking dish (for two pieces, I use an 8×8 Pyrex).
2. Spread the softened cream cheese over the chicken.
3. Pour salsa over the cream cheese and chicken.
4. Cover and bake for 30 minutes.
5. Remove from the oven, uncover, and sprinkle with shredded cheese (I use cheddar or a Mexican blend).
6. Recover and bake for another 30 minutes or until the chicken is cooked through and the cheese is bubbly.
7. Serve with your choice of sides. I usually serve this with rice and corn, as seen in the photo. And I apologize for the photo. I promise it’s more appetizing and scrumptious than it looks with my mediocre photography skills!

My mouth is still dancing as I had some leftovers today for lunch. Everyone in the office came running into the breakroom to see what smelled so good!! This is super, super easy and soooo yummy. The cream cheese is so smooth when it is cooked!! Thank you so much for this recipe!!

Sorry, yes, 350 degrees. I could have sworn I wrote that in there, but maybe it was deleted during the various stages of editing and reading over.
