Description

My dear daddy used to make this for our family to give mom a break in the kitchen. He was the best comfort food cook ever and I miss his cooking for us.

Ingredients

  • 1 bag Elbow Macaroni (1 Lb. Bag)
  • 8 slices Bacon, Cooked And Sliced, Plus Two Or Three To Top Casserole
  • 1 whole Spanish Onion, Chopped (medium)
  • 1 whole Bell Pepper, Chopped
  • Salt And Pepper, to taste
  • 2 cans Stewed Tomatoes
  • 3 cups Shredded Cheddar Cheese, Divided
  • ½ cups Panko Or Other Dry Bread Crumbs

Preparation

Add elbow macaroni to rapidly boiling, salted water and stir frequently to keep from sticking. Cook until al dente. Drain and set aside.

While macaroni is cooking, cut bacon into bite-size pieces (not diced) then cook bacon until done, but not too crisp. Set aside on paper towels to drain.

Add chopped onion and bell pepper to the pan where the bacon was cooked. Saute until onion is transparent. Add salt and pepper.

Combine the macaroni, bacon, 2 cans of stewed tomatoes, onions, bell pepper and two cups of shredded cheddar cheese to a casserole dish. Top with remaining cup of shredded cheddar cheese, 1/2 cup of panko crumbs and three slices of bacon.

Bake at 350F for 25 to 30 minutes until cheese is bubbly.
