Description

These curried turkey burgers are a healthy alternative to regular hamburgers for your summer cookouts!

Ingredients

  • FOR THE BURGERS:
  • 1 Tablespoon Olive Oil
  • 1 cup Onions, Diced
  • 1 cup Red Bell Pepper, Diced
  • 2 teaspoons Fresh Ginger Root, Minced
  • ½ teaspoons Crushed Red Pepper Flakes
  • 1 teaspoon Kosher Salt
  • ½ teaspoons Black Pepper
  • 1 clove Garlic, Minced
  • 1 Tablespoon Sweet Curry Powder
  • 1 Tablespoon Reduced Sodium Soy Sauce
  • 2 Tablespoons Chopped Fresh Parsley
  • 1 pound Lean Ground Turkey
  • 4 whole Hamburger Buns
  • 4 leaves Lettuce
  • Chives, For Garnish (optional)

  • FOR THE APPLE CHUTNEY:
  • 2 teaspoons Olive Oil
  • 1 whole Granny Smith Apple, Peeled, Cored And Diced
  • ½ cups Onions, Diced
  • 1 teaspoon Fresh Ginger Root, Minced
  • 1 pinch Crushed Red Pepper Flakes
  • ¼ teaspoons Kosher Salt
  • ⅛ teaspoons Black Pepper
  • ½ teaspoons Sweet Curry Powder
  • ½ Tablespoons Brown Sugar
  • 1 Tablespoon Fresh Lemon Juice

Preparation

Heat olive oil in skillet over medium heat. Add onions, bell pepper and ginger. Season with crushed red pepper flakes, and a bit of the salt and pepper. Saute until onions are softened and translucent, 5-6 minutes. Add the garlic and saute for another minute or two. Remove pan from heat and stir in curry powder, soy sauce and parsley. Let cool for a few minutes.

Place ground turkey in a large bowl. Season with the remaining salt and pepper and add the vegetables mixture. Combine well but don’t over mix. Divide mixture into four equal patties. Grill or pan fry in a little olive oil until cooked through. I pan fried mine in olive oil over medium heat for 6 minutes per side.

To serve: Place lettuce on lower bun half. Place burger on top of lettuce and then spoon the apple chutney on top (recipe follows) Garnish with chives (optional)

Apple Chutney:

In a medium non-stick skillet heat olive oil over medium heat. Add apples, onions and ginger and season with red pepper flakes, salt and pepper. Saute until onions and apples have softened a bit and then add the curry powder and brown sugar. Continue to cook until apples are completely soft. Remove pan from heat and stir in the lemon juice.
