A delicious curried chicken recipe my dad shared with me. Should be served with cooked rice—I prefer brown long grain rice.
A note: you can swap out the 3 cups of chicken for a can of mock duck or 3 cups of cooked tofu.
Saute chopped onion and celery in margarine in a large shallow pan; saute until onion is soft (about 5 minutes). Stir in curry and flour, cook 1 minute. Add tomatoes and green pepper, cook stirring often for 5 minutes. Stir in parsley, salt, pepper and broth. Lower heat and simmer covered for 10 minutes.
Add chicken and raisins; heat through and serve over cooked rice.
