I love Cuban sandwiches so I decided to make this one a quesadilla. It worked!
Spread half the mustard on one side of each tortilla. Layer provolone cheese, pickle slices, ham slices, pork, and Swiss cheese (in that order) on the mustard side of a tortilla. Top with another tortilla, with the mustard side facing the Swiss cheese.
Spread butter on the outside of both tortillas.
Preheat oven to 400ºF.
In a medium saucepan on medium high heat, place the quesadilla and cook until golden brown. Flip and repeat the process.
Slide tortilla onto a baking sheet (or use an oven safe saucepan) and place it in the oven and cook for 3-5 minutes or until the inside is warm and cheese is gooey.
I can honestly say this fresh pasta recipe works every time. It rolls out beautifully, tastes great, doesn’t blow up in the water, doesn’t break when you make ravioli and the dough can be made ahead and kept in the refrigerator!
I make pasta a lot, mostly ravioli. I make a bunch and freeze them and it makes getting dinner on the table so easy! Feel free to substitute spinach, basil, chard or kale … but ramps are in season!
