Description

Scrumptious marinated pork chops with a delicious chimichurri-style sauce. Divine!

Ingredients

  • FOR THE CHOPS:
  • 6 whole Bone-in Center Cut Pork Chops
  • 2 cups Orange Juice
  • 2 whole Limes, Juiced
  • 5 cloves Garlic, Minced
  • 2 teaspoons Cumin
  • ½ teaspoons Cayenne Pepper
  • 1 Tablespoon Dried Oregano
  • 1 whole Small Yellow Onion, Halved And Sliced Thin
  • FOR THE SAUCE:
  • 1 bunch Cilantro
  • 1 bunch Parsley
  • 1 cup Olive Oil
  • Salt And Pepper, to taste
  • 2 cans (15.8 Oz. Size) Bush’s Black Bean Fiesta Grillin’ Beans, To Serve

Preparation

Combine orange juice, lime juice, garlic, cumin, cayenne pepper, oregano, and onion in a large zipper bag. Squish it around to combine, then throw in the pork chops! Seal the bag and marinate them for several hours…but overnight is better!

While the chops are marinating, add cilantro and parsley leaves to a blender. Add olive oil and blend until smooth. Season with salt and pepper, then transfer the mixture to a small container and keep in the fridge.

Remove the pork chops from the marinade (discard the bag). Grill the pork chops until they’re totally done.

Spoon the sauce over the top of the chops and serve them with the yummy Bush’s Black Bean Fiesta Grillin’ Beans!

I did not make the chimichurri sauce, but I found the pork chops to be very good. They were not as juicy as I would have liked but perhaps I overcooked them a tad. I also made them stove top.

DISCLAIMER- I cooked this on stovetop. That was probably the mistake.
My sister, her husband and I made this for a family dinner. We couldn’t taste any of the great flavors from the marinade I used all the same ingredients as directed. The meat was decent-not dry but not moist, we felt that all those ingredients went to waste and I did leave it marinating overnight.
I also think 1cup of Olive Oil was way to much for the chimichurri style sauce, next time I will use 1/2cup and add in garlic.
I’ve made lots of other recipes from PW which I loved and remake, this one sadly will not be remade…well maybe I’ll give it a shot on the grill. I’ll repost comments if it works out better on the grill.

Just finished eating this for dinner. Everyone enjoyed it, and I CANNOT get enough of that chimichurri. The marinade for the pork was very flavorful and kept the pork super tender and moist. I confess, I did add a bit of grated fresh garlic to my chimichurri. Will definitely be making these again.
