Description

These crunchy chicken tenders are juicy and have a hint of heat. Be sure to get the kids involved with this easy recipe!

Ingredients

  • 2 whole Chicken Breasts
  • 4 cups Corn Flakes, Crushed
  • 1 cup Flaked Coconut
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Salt
  • ½ teaspoons Ground Pepper
  • 2 whole Eggs
  • 2 Tablespoons Milk
  • 1 cup Honey Mustard Dipping Sauce, Optional For Serving

Preparation

Preheat oven to 375 degrees F. Spray a baking sheet with cooking spray.

Pound the chicken breasts until 1/2″ thick and cut into 2 inch strips.

In a shallow bowl mix corn flakes, coconut, ginger, salt, and pepper.

In another shallow bowl beat egg and milk.

Dip the chicken into the egg mixture then into the corn flake mixture. Press to ensure the corn flakes stick to the chicken.

Place on the prepared baking sheet and bake for 12-14 minutes. Serve with a honey mustard dipping sauce.

These were quite good and very crunch. I thought the flavor was a little lacking.. maybe a little more ginger next time! I used breast tenderloins to save a step and they turned out really well. Pairs awesome with the honey mustard sauce! My toddler totally chowed down on them!
