I use the crockpot because I have to, not because I necessarily like to. But this really was a crowd pleaser at our house, which isn’t always easy with two picky children and two discriminating parents. It’s nice to find a crock pot recipe that uses the crockpot because it tastes great, not just because you are having a crockpot kind of a day! So far, I’ve just taken leftovers in my lunch and haven’t saved any up for soup.

My husband was wanting to make something chicken in the crockpot, with only 4 hours available for cooking. The reviews and EASE of prep sold me on this recipe…and even after reading all of the positive notes, I was STILL impressed. This is delicious! And it’s easy, and it’s low-fat. This will surely become part of our weekly dinner rotation.

I needed a quick in preparation crock pot recipe with ingredients I had on hand…this fit the bill. As I dumped everything in I thought it would be OK, at best. Boy, was I wrong! We LOVED it! I used a black bean/corn salsa (what I had in the pantry) and added only 1.5 tbsp of taco seasoning (I make my own to avoid the sodium). Delish! My husband, who is Hispanic, is picky over his “Mexican” food, but he gave it two thumbs up. This will be a go-to from now on. Thanks for the wonderful recipe! (Trying the soup tonight with some of the leftover chicken, as suggested.)

Delicious! I made this tonight for the second time and my family loved it both times. The first time I followed on reviewer’s suggestion to use the leftover chicken with PW’s Chicken Tamale Casserole and this time I made the tacos and soup. All three ways were winners! I think I will make tacos this way from now on!

Awesome!! I used 1 lb of “thin cut” chicken breasts (fresh, not frozen) and it only took about an hour and fifteen minutes on high in my crockpot (which I had preheated before adding the chicken and salsa). Shredded beautifully, very moist, made awesome tacos in flour tortillas spread thinly with refried beans and topped with cilantro, chihuahua cheese, sour cream, and thin slices of avocado. Will make this again and again!!

Super easy and flexible!! I had a bunch of frozen chicken that I needed to use up, so I trimmed them and added 16 oz salsa, 2 T taco seasoning (I make my own) and then realized I needed more liquid. Looking into my pantry didn’t turn up any additional salsa, but I did have crushed tomatoes. Woot! Topped the crockpot off with a couple more tbsps of taco seasoning and Voila!
I’m using all the chicken for tacos to take to a potluck tonight, but will definitely make again for leftovers and the soup.

So delicious! It was so easy to prep, that I had mild expectations … but this tasted like something that should be much more complicated to make. Thanks for sharing!

It was cold so I made this on the stove one evening. Prepared only a couple of tacos (which were great). I then prepared your soup recipe with original (not mild) Rotel and served an extra spoonful of rotel in the spicy eater’s bowl. Everyone LOVED it! Thank you.
