Description

A modification of a ridiculous recipe…now it’s easy and yummy.

Ingredients

  • 8 cups Water
  • 2 cups Chopped Carrots
  • 1 cup Chopped Onion
  • 1 cup Chopped Celery
  • 1 Tablespoon Chopped Fresh Sage
  • 1 Tablespoon Chopped Fresh Basil
  • 1 teaspoon Dried Thyme Leaves
  • 1 whole Chicken Breast, Cut Into Bite Size Pieces
  • 1 cup Uncooked Rice
  • 2 cups Frozen Peas

Preparation

Turn the crockpot on high, and add all the ingredients except the rice and peas. You can substitute any herbs you’d like…this is what I happened to have around.

Let cook on high for two hours, or one hour before you want to eat. Add the rice.

Right before you want to serve it, add the frozen peas and let them warm through.

Yum yum! I just used what I had on hand… Italian seasoning (I read somewhere it’s similar to Thyme), basil, and parsley… and I used 4 cups water, 4 cups chicken stock, and 4 boullion cubes. I like things salty though (obviously!). :) Also served it with homemade cornbread… delicious!

This was good, and easy as advertised. I think it needs some salt/bullion though, but that could be just because I’m a salt fiend! I also added some chopped fresh mushrooms that I happened to have on hand and that made a delish addition.
