Description

Skip the take-out this weekend and make this crockpot chicken and broccoli instead! Made in a slow cooker, this recipe is so easy to make and tastes amazing!

Ingredients

  • FOR THE CHICKEN AND BROCCOLI
  • 1 cup Chicken Broth
  • ½ cups Soy Sauce
  • 1 Tablespoon Hoisin Sauce
  • ¼ cups Dark Brown Sugar (packed)
  • 1 Tablespoon Sesame Seed Oil
  • 4 cloves Garlic, Minced Or Pressed
  • 1-½ pound Boneless, Skinless Chicken Breasts
  • 2 Tablespoons Cornstarch
  • ¼ cups Water
  • 1 head Broccoli Cut Into Florets
  • FOR THE RICE:
  • 1 cup Long Grain Rice
  • 2 cups Water
  • 1 teaspoon Salt
  • 1 Tablespoon Unsalted Butter

Preparation

For the crockpot chicken and broccoli:
Whisk together chicken broth, soy sauce, hoisin sauce, brown sugar, sesame seed oil, and garlic cloves.

Place chicken breasts in the crockpot and pour the sauce over the chicken. Cover and cook on low for 4 hours.

Mix together cornstarch and water and stir it into the crockpot. Stir in broccoli florets. Cover and cook on high for 1 hour.

Remove the chicken, cut into large chunks, and place it back in the crockpot. Serve immediately over rice!

For the rice:
Place rice, water, salt, and butter in a medium sized saucepan. Bring to a boil. Cover, lower heat to low, and simmer for 15 minutes. Fluff with a fork.

Notes: If you’re gluten-free, make sure your soy sauce is gluten-free, too!

Tried this recipe with thawed frozen chicken tenderloins, and accidentally I added too much water. Cooked hour faster so ne sure to monitor it if using smaller meat pieces. I also added cut small oinions to tenderize the meat, just a cup full diced. You may need to add the broccoli around 45min to 30min, for I found my to turn out very soft. I did not do the rice, had only minute rice in the pantry sadly. Over all was decent, yet chicken came out dry -suspecting it was for they were frozen or too thin. Was not bad for using ingredients I needed to use up in my pantry.

Three mits for factoring in the varibles, and wished they spoke what size crockpot they used. I am now using this as a reference for making my own Brown Sauce Chicken & Broccoli, with more meat, added thick Teriyaki suace and a sprinckle of half dried ginger bits.
