Description

Venison slow cooked in a crock pot, made to go on top of rice with fresh steamed vegetables.

Ingredients

  • 2 pounds Venison, Cubed Into Bite Size Pieces
  • 1 envelope Lipton Onion Soup Mix
  • 1 jar Salsa (any Brand)
  • 2 cups Rice Or 2 Packages Of Boil-in-bag Rice
  • 1 package Mixed Frozen Vegatables (fresh If You Want!)

Preparation

Cube 2 pounds of venison into bite size pieces. Remember, venison will shrink, so make your uncooked pieces large enough to shrink into the bite size you want. Add to Crock Pot.

Add to the crock pot 1 envelope of Lipton Onion Soup Mix and 1 jar of salsa sauce. I like to use medium flavor, but you may want mild or hot!

Mix together, put the cover on and cook on high for 3 hours.

When you are down to the last half hour, steam your vegetables and cook your rice.

When your venison topping is finished cooking, layer in a casserole dish first the rice, then your steamed vegetables, then the venison topper.

This is a nice lean meal, great in the winter time!

I skipped the rice and veggies and instead put over homemade cornbread with a little cheese and sour cream – yummy. I will admit my salsa jar wasn’t quite full so I added a half pint of homemade ketchup to the mix.
