1. Peel, slice and cut potatoes into 1/4 inch wide strips. Cube or shred ham. Set aside.
2. Melt butter in a large pan. Chop onion and press garlic. Saute until soft and translucent.
3. Stir in flour, salt, and pepper. Slowly add milk, then cheeses until thick and creamy.
4. In a large bowl, mix potatoes, ham, and cheese sauce. Scrape into a sprayed 6-quart slow cooker.
5. Cover and cook for 6 hours on low, or 3 hours on high, or until potatoes are soft.
