Description

Fix this in the morning and them come home to an amazing dinner. This is a family favorite!

Ingredients

  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • ½ teaspoons Onion Powder
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper
  • 2-½ pounds Roast, Cut Of Your Choice
  • ½ cups Chopped Green Pepper
  • ½ cups Chopped Onion
  • 1 whole Tomato, Diced
  • 2 cups Corn
  • Rice For Serving

Preparation

Combine spices. Put roast in crock pot. Pour half of your spices over the roast. Rub in. Flip roast and coat with remaining spices, rubbing in well. Pour veggies (excluding corn) over the roast. Layer the corn over the top. Cover and cook on low for 8-10 hours or until temperature reads 160+ degrees F. Serve over a bed of rice.

My family just didn’t dig this. Not sure what it was but it was just kinda of blah. I was disappointed because based on how it smelled while cooking I was expecting amazing. I think since it cooks so long and slow that the seasonings wear off. Might need to really up the seasonings amount. Sorry, it just didn’t work for us.
